Vegan Vindaloo Recipe

Add these to crockpot

  • 2 tbsp Cardamom
  • 1-2 tbsp Curry powder
  • 2 tbsp Cumin
  • 1 tbsp Brown sugar
  • 1/2 tbsp Paprika
  • 2 tbsp Turmeric
  • 1 tbsp Garlic (fine chopped)
  • 1/2 tsp Mustard seed
  • 3 tbsp vegan butter
  • 3 tbsp red wine vinegar
  • 1 tbsp pepper
  • 1-2 tbsp red pepper flakes (more = spicier)
  • 1 tbsp ginger paste
  • 1/2 can crushed or minced chili peppers
  • 2 cans crushed tomatoes and onion like Rotel (or use your own and blend two tomatoes and one onion)
  • 1 cup water

Cook on high for 1 hour stirring occasionally. Add protein – I used cauliflower, air fryer tofu, and chickpeas. Cook for additional two hours on high, stirring and adding more seasoning to taste as you go.
